Enchilada marriage

I married these two recipes
Cheesy Enchilada Stack and Crockpot Chicken Enchiladas

to make a dish so delicious that I forgot to take a picture before we devoured it with some friends...

What is your favorite Mexican dish?!?!
I'm looking for great crockpot recipes and recipes to make up and freeze!!!

    I love the title! :) Hamburger with seasoning put in a tortilla with cheese is about as Mexican as I get. :)

    Mmm! I"m so hungry right now I'm glad you don't have pictures, because I don't know if I could handle it! It may sound boring but I love nachos :)
